Official Stuffed Manicotti

Stir the parsley into the beaten eggs. Then, combine the eggs (or tofu)
with the Ricotta cheese, salt, onion, and Parmesan.

Stuff the UNCOOKED manicotti shells with this cheesy mixture.
It's a bit of a chore but if you're willing to make a bit of a mess it's
not so difficult.

Then pour about half of the tomato sauce into a baking dish.
Arrange the manicotti in the dish on top of the sauce, then pour the rest
of the sauce over them and bake in a 400 degree oven for 20 minutes.

Before serving, take off the cover, sprinkle with more Parmesan, and bake
uncovered for a few minutes.

Mmmmmm... cheesy....
